OPEN-TYPE PROCESS TANK
The Ekselans Open-Type Process Tank is used in the production of cheeses such as kashar, mozzarella, halloumi, gouda, and cheddar. Unlike closed systems, it allows the operator to observe curd formation in real time.
All stages—including milk heating, homogeneous mixing of the starter culture, curd formation, precise cutting, and curd cooking—are performed within this single tank. Thanks to the PLC-controlled automation system, blade speeds and process times can be automatically adjusted according to predefined recipes, ensuring consistent curd quality.
