HALLoumi CHEESE UNIT
Specially designed for the most critical stage in the production of Cyprus-origin Halloumi cheese — the cooking of pressed blocks in whey — the Ekselans Halloumi Cheese Unit combines traditional flavor with industrial hygiene standards.
Manufactured in a rectangular prismatic structure, the tank provides operational convenience through stainless steel boiling baskets placed inside. Pressed and cut Halloumi blocks are arranged in these baskets and immersed in whey maintained at a constant temperature of 85°C–95°C. Once the cooking process is completed, the baskets are lifted by a crane or pneumatic system, allowing the products to be removed without damage. For enhanced resistance against salt corrosion, the unit can optionally be manufactured using AISI 316 stainless steel.
